Pickled Pink Cucumber Salad



2 small - red onions (any kind of onions can be used, but only red produce pink cukes) 1/8"thin sliced rings.
1 cucumber sliced thicker than the onion aprox.1/4" thin.
1 cup rice vinegar ( Marukan is her favorite brand)
1-2 Tbls sugar (how sweet do you like things? not too sweet use 1TBL, really sweet use 2+)
1/2 teasp season salt
1/4 cup toasted sesame seeds (optional)

Stir spices and sugar into vinegar until all dissolved. Red onions will turn the cukes pink.
Chill for a 1/2 hour. serve. Can fancy up with toasted sesame seeds. Refrigerate and left-overs can be used the next
day as soggy pickles that taste great.
