Kohlrabi & Slaw with Creamy Coleslaw Dressing

Whisk into light pillows (takes just a minute):
~ 1/4 cup cream

Stir in:
~ 1 Tbsp fresh lemon juice
~ 1/2 Tbsp your favorite mustard
~ 1/2 tsp sugar
~ Salt and pepper to taste (go easy here)
~ Chopped fresh mint

Add approximately equal parts:
~ Fresh Kohlrabi, trimmed, peeled, and grated or julienned
~ a couple of apples, peeled and grated

Stir and serve immediately.
