1 quart new potatoes scrubbed and washed
2 TB Olive Oil Fresh herbs (choose any herb or herbs that you like)
Salt and Pepper to taste
Scrub and rinse potatoes. Cut larger potatoes in half to make bite size. Put in baking dish and toss with oil, herbs and salt and pepper. Roast in the oven for about 40 minutes or until tender. Serve with sour cream.
