- Large ripe tomatoes, cut into 1/4 inch slices
- Fresh mozzarella cheese, cut into 1/4 inch slices
- Fresh basil, chopped
- Olive Oil
- Salt and pepper to taste
On a small plate, alternate overlapping slices of tomato and mozzarella cheese. Sprinkle with fresh basil and drizzle with olive oil. Serve at room temperature. Serves 2+.
